PBJDear PB & J,

I am writing this letter, on your national day of acknowledgement, to tell you thank you.

Thank you for being one of the only foods that my lovely (insanely picky, stubborn, exhausting) daughter will eat without an epic battle.

Thank you for being mostly healthy in the grand scheme of things, and significantly healthier than most of the foods I can convince my daughter to eat, when I can convince her to eat at all.

Thank you for being a reliable friend, to whom I can turn on the nights when I am completely exhausted and unable to muster up the energy to try to create a nutritious dinner for a child who will dig in her heels (and whine!) and not eat it anyway.

Thank you for giving me a packable lunch alternative for when we want to go on a picnic or to the park.

Thank you for making her happy when she squishes you into a cookie cutter shape prior to eating you (because let’s face it, the worst part about you is that you come with crusts, which simply cannot be tolerated).

Thank you, in general, for being yummy.

My only complaint about you is that you contain peanuts, which means I can’t send you to school with her next year in her packed lunch. Something that makes me want to cry (not exaggerating) when I think about it because I have no idea what else to send.

But, even with that flaw, I am still ever grateful for your existence. Now if you could only figure out a way to mask the flavor of vegetables, I would, hands down, be your biggest fan.
