A Holiday Recipe (and Gift!) :: Easy, Moist Pumpkin Bread

To me, Fall means one thing: pumpkin everything. Yes, I am one of those people who go crazy with pumpkin once the weather turns. My pumpkin love includes coffee, beer, pie, patches, decorations and lastly, bread.

My easy pumpkin bread recipe is the perfect fall treat for breakfast, a snack or late night dessert. This can also be the perfect gift to bring along to any holiday party or give as a gift to a teacher, babysitter or someone special in your life.

Check out the recipe below and make it your own by adding chocolate chips, raisins, nuts or pumpkin seeds!

Oh, and did I mention this recipe makes 2 whole loaves? Or if you want to mix it up a bit, make one loaf and a dozen muffins like I did!

Easy, Moist Pumpkin Bread

1 can (15 oz) pumpkin puree
1/2 cup vegetable oil
1/2 cup applesauce (sweetened)
4 eggs
2/3 cup of water
3 cups sugar
3 1/2 cups flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp ground nutmeg
1 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp ground ginger

  1. Preheat oven to 350 degrees. Grease two loaf pans.
  2. In a large bowl, mix together pumpkin puree, vegetable oil, applesauce, eggs, water and sugar until well blended. In a separate bowl, mix together remaining dry ingredients until blended. Stir the dry ingredients into the pumpkin mixture until blended. Pour mixture into the prepared pans.
  3. Bake for 50-60 minutes. Use a toothpick to check the center to ensure the bread is done. If it comes out clean, you are done! Cool in the pan for a few minutes before transferring to a cooling rack.

If taking to a party or giving as a gift, I recommend wrapping the bread with plastic wrap and decorate with a festive ribbon!
